Rather than retreating from the restaurant during treatment, Achatz made Alinea his comfort and anchor. Without the ability to taste, he developed a vocabulary of comparison to direct his top three chefs: he wanted a dish 'as acidic as a pickle, as sweet as Dairy Queen ice cream.'
